New Winter Plants
Picked up new plants from a home selling plants between Kinder & Indian Village: dynasty red flowering cabbage, dynasty white flowering cabbage and kamome red flowering kale.
Thinking of planing them along the house instead of in the garden.

Green Tomatoes
Frost the last few nights. Picked a few roma tomatoes today and put them in a bag wrapped in newspaper with apples and banana to see if they ripen. Will check each day.

Beef Vegetable Soup
Stew meat
Corn
String beans
Diced Tomatoes
Onions
Garlic
Beef Bouillon cubes
Tomato Sauce
Brown your stew meat, then add onions and garlic and continue to brown until onions are not recognizable. Add rest of ingredients and water, simmer until meat is tender. Add 2 or 3 bouillon cubes about 30 minutes before finished cooking.

Turtle Sauce Piquant
Vegetable Oil
1 Large onion, chopped
2-3 Stalks Celery (chopped)
1 Large Bell pepper (chopped)
Garlic (sliced)
Green onions (Chopped)
1 small can tomato sauce
Seasonings to taste (salt, black pepper, cayenne pepper) and/or (Tony’s, or Seafood Magic)
2-3 lbs Turtle Meat (can substitute with just about any kind of meat you want)
Water
Splash or Two of Vinegar to deglaze pot while browning (optional, can use water
instead)
Add enough oil to cover bottom of pot and heat. Season meat to taste and add
to pot. Brown meat over medium to high heat until well browned. You will
need to add a little water and scrape the bottom of the pot a few times during
the browning process to keep from burning. Add onion, garlic, bell pepper
and celery to pot. Continue browning process until vegetables are soft. Add
can of tomato sauce and let tomato sauce fry down a little while stirring often
not to burn. Then add 1-2 cans of water (add more or less water depending on
desired thickness of gravy, remember gravy will thicken while simmering).
Scrape bottom of pot to remove all remnants of browning. Simmer on low
heat for about 45 minutes to 1 hour or until meat is tender. Taste gravy to see
if more seasonings needed. Add green onions to dress. Serve with rice.
Potato skins
Wash potatoes, pat dry
Oil with olive oil and salt
Place in oven for 45 min on 350
Remove potatoes, halve and scoop out insides
Mix with butter salt pepper and ranch dressing
Stuff potatoes and cook for another 45 min
Top wit cheese bacon chives and sour cream
Winterized Garden
Winterized the garden with 2 bales of hay and a few sheets, suppossed to have a light freeze tonight.

Garden update 11-28-10
First frost 2 nights ago, still very little rain. Broccoli and Califlower starting to produce. Need to put some hay down to help keep the grass down

String Change, Home Guitar
Tried some new D'Addario EXP19 strings and love them. Tuned down 1/2 step to cut some of the twang out of the new strings and they really sound great.

Fall Garden 10-13-10
Planted spinach and carrots by the oinion tops, bought more onion tops and parsley 2 plant

Planted more lettuce seed and it rained about an inch that night (Monday) and last night as well. High have been in upper 80's and Lowes in 60's. Front came through last dropping temps back down to the 50's

Fall Garden 2010 Oct 5th update
Chaz helped me replant snow peas around the outside of the garden. I think the high was mid to upper 80's today with 18% humidity, nights have been down in the 50's, with no rain at all. Very DRY summer.

Skirting continues
Chaz helped me extend the skirting to the end of the trailer and finished putting the bottom all the way around. Need to get about 4 or 5 more sheets and will be finshed. Then need to insttall at least 2 access doors.
Fall Garden 2010 October 4th Update
Lettuce and carrots are starting to come up, had to replant broccali, some cabbage also. Snow peas and sunflowers did not come up, niether did any of the flowers around the outside of the garden. Planning on replanting snow peas. Temp has been in the mid 90's before this week but now temp is in the mid to low 80's
Garden Work
Chaz helped me finish the wooden fence around the garden and I stapled the chicken wire to the back of the wood slats over the weekend. Also cut the wooden fence post down to 12" above the wooden slats

Garden update
Garden still doing good. Lots of rain over past few weeks, stink bugs have started to show, so I tried all natual insecticide yesterday: ivory soap and jalapeño peppers in a sprayer. Lots of tomatoes,cucumbers, jalapeño, bell pepper. Corn looking great, but cucumbers are fading fast. May start some more cumber and tomatoe plants soon.
Also put out a top dressing of compost and sprinkled in some slow release fertilizer as well.

Blackberry Cobbler
Aunt olite's sweet dough, so Good!
Blackberry Cobbler with Sweet Dough Crust
Dough:
2 cups sugar
3 1/2 cups flour
1 tsp baking pwdr
1/2 tsp baking soda
1/2 cup milk
1 stick softened butter
2 eggs
Mix dry ingredients, then add wet ingredients. mix well. Spread out into a 9X13 pan. Don't spread it out evenly. you want it to be kind of messy so that when it's baking, the dough pokes thru the filling in some spots. wet your fingers when spreading it out so that your fingers wont stick to the dough.
Filling:
3 cups berries
1 cup sugar
5 tablespoons cornstarch
1 tsp lemon juice (Aunt Olite's recipe didn't call for lemon juice, but its pretty standard to use lemon juice when baking with fruit)
Mix well in pot on the stove and cook slowly until berries are mashed up pretty good and the filling is kinda gel, but not too dry. Don't cook it too long, and don't let it stick b/c its hell to get off the pot.
Pour the filling over the UNcooked dough and bake @350 until golden brown. About 30 minutes or so.

Blackberry's
Chaz has been picking blacberries for the last week in the patch of woods
behind the house. Last night on facebook Joshua Dahlen posted that he was cooking a cobbler with sweet dough crust and it was Aunt Olites recipet. He sent it to me and this afternoon I walked along the fence behind the garden and easily picked 3 and a half cups of blackberries. Chaz and I will go back this weekend and pick some more.

Garden Update
Garden doing good, has not rained in months. Still using soaker tubes to water and working great. Cucumbers are starting to wilt on the leaves, turning a yellow. Will try to find out what it is.

Back Update
Had my back surgery on April 8th and feel great now. Having a little soreness in my lower spin, but that is from the bone growing together. Just rode with Eva to Baton Rouge and did not have any problems with my back.
Still not suppossed to lift or push anything over 10 lbs. My next appt should be at the end of this month, and I should be able to go back to work after that.
No stitches, only tape an glue. The worst part was probably the incision soreness. I caught a cold a few days after sugory and every time I sneazed it felt like someone kicked me in the incision and my spin.
After surgory, Dr told mom and Eva the the disk extremely dehydrated or dead, it fell apart like crab meat

Gaden update
Garden update, looking pretty good so far. No rain in weeks. I had to replant okra and corn seeds. Planted everthing from seed, except tomatoes, bell peppers and jalapeños.
