Blackberry Cobbler

Aunt olite's sweet dough, so Good!

Blackberry Cobbler with Sweet Dough Crust

Dough:
2 cups sugar
3 1/2 cups flour
1 tsp baking pwdr
1/2 tsp baking soda
1/2 cup milk
1 stick softened butter
2 eggs

Mix dry ingredients, then add wet ingredients. mix well. Spread out into a 9X13 pan. Don't spread it out evenly. you want it to be kind of messy so that when it's baking, the dough pokes thru the filling in some spots. wet your fingers when spreading it out so that your fingers wont stick to the dough.

Filling:
3 cups berries
1 cup sugar
5 tablespoons cornstarch
1 tsp lemon juice (Aunt Olite's recipe didn't call for lemon juice, but its pretty standard to use lemon juice when baking with fruit)

Mix well in pot on the stove and cook slowly until berries are mashed up pretty good and the filling is kinda gel, but not too dry. Don't cook it too long, and don't let it stick b/c its hell to get off the pot.

Pour the filling over the UNcooked dough and bake @350 until golden brown. About 30 minutes or so.
