Blackberry Cobbler

Aunt olite's sweet dough, so Good!

Blackberry Cobbler with Sweet Dough Crust

Dough:
2 cups sugar
3 1/2 cups flour
1 tsp baking pwdr
1/2 tsp baking soda
1/2 cup milk
1 stick softened butter
2 eggs

Mix dry ingredients, then add wet ingredients. mix well. Spread out into a 9X13 pan. Don't spread it out evenly. you want it to be kind of messy so that when it's baking, the dough pokes thru the filling in some spots. wet your fingers when spreading it out so that your fingers wont stick to the dough.

Filling:
3 cups berries
1 cup sugar
5 tablespoons cornstarch
1 tsp lemon juice (Aunt Olite's recipe didn't call for lemon juice, but its pretty standard to use lemon juice when baking with fruit)

Mix well in pot on the stove and cook slowly until berries are mashed up pretty good and the filling is kinda gel, but not too dry. Don't cook it too long, and don't let it stick b/c its hell to get off the pot.

Pour the filling over the UNcooked dough and bake @350 until golden brown. About 30 minutes or so.

Blackberry's

Chaz has been picking blacberries for the last week in the patch of woods behind the house. Last night on facebook Joshua Dahlen posted that he was cooking a cobbler with sweet dough crust and it was Aunt Olites recipet. He sent it to me and this afternoon I walked along the fence behind the garden and easily picked 3 and a half cups of blackberries. Chaz and I will go back this weekend and pick some more.

Garden Update

Garden doing good, has not rained in months. Still using soaker tubes to water and working great. Cucumbers are starting to wilt on the leaves, turning a yellow. Will try to find out what it is.

Back Update

Had my back surgery on April 8th and feel great now. Having a little soreness in my lower spin, but that is from the bone growing together. Just rode with Eva to Baton Rouge and did not have any problems with my back.

Still not suppossed to lift or push anything over 10 lbs. My next appt should be at the end of this month, and I should be able to go back to work after that.

No stitches, only tape an glue. The worst part was probably the incision soreness. I caught a cold a few days after sugory and every time I sneazed it felt like someone kicked me in the incision and my spin.

After surgory, Dr told mom and Eva the the disk extremely dehydrated or dead, it fell apart like crab meat

Gaden update

Garden update, looking pretty good so far. No rain in weeks. I had to replant okra and corn seeds. Planted everthing from seed, except tomatoes, bell peppers and jalapeƱos.
